15-Minute Brami Protein Pasta with Creamy Kale Miso Sauce (Vegan & High Protein)

Instructions
Cook the pasta
Bring a large pot of salted water to a boil. Cook Brami curly macaroni according to package instructions until al dente. Reserve 1 cup of pasta water, then drain.
Build the flavor base
In a large skillet, heat olive oil over medium heat. Add onion and garlic, sautéing until fragrant and translucent (about 3 minutes).
Add tomatoes & kale
Stir in the diced tomatoes and cook until softened. Add the chopped kale and sauté until wilted (3–4 minutes).
Season & enrich
Stir in the miso paste, Italian seasoning, red pepper flakes, and a splash of reserved pasta water. Let everything simmer for 2 minutes.
Blend into sauce
Transfer the mixture to a blender (or use an immersion blender). Blend until smooth, adding more pasta water as needed for creaminess.
Toss the pasta
Return the sauce to the pan, add the cooked pasta, and toss until every noodle is coated in the creamy kale sauce.
Finish with freshness
Season to taste with salt and pepper. Add fresh herbs and a squeeze of lemon juice before serving.
