🍝 Vegan Bacon & Mushroom Pasta (No Cream)

This Vegan Bacon & Mushroom Pasta—a hearty, dairy-free pasta dish that’s simple enough for a weeknight but impressive enough to serve at your next dinner party.

Ingredients
  

  • 8 oz pasta penne, rigatoni, or spaghetti
  • 4 strips Thrilling Foods Vegan Bakon chopped into bite-sized pieces
  • 8 oz mushrooms cremini, shiitake, or mixed, sliced
  • 1 cup grape tomatoes halved
  • 3 cloves garlic minced
  • 2 cups fresh spinach or kale, arugula, or mixed greens
  • 2 tablespoon olive oil or vegan butter
  • 2 tablespoon fresh lemon juice about 1 lemon
  • ¼ cup Rebel Cheese or other vegan cheese, crumbled
  • ½ teaspoon sea salt plus more to taste
  • ½ teaspoon freshly ground black pepper
  • ¼ cup reserved pasta water to adjust consistency
  • Fresh herbs parsley or basil for garnish

Instructions
 

  • Sauté the mushrooms – In a large pan over medium heat, cook mushrooms until golden brown and fragrant.
  • Add garlic & vegan bacon – Stir in garlic, then crisp up the Thrilling Foods Bakon for a smoky base. Season as you go with whatever spices you might have!
  • Toss in noodles & greens – Add your cooked pasta along with spinach or kale for a pop of freshness.
  • Brighten & enrich – Mix in lemon juice, grape tomatoes, and crumbles of Rebel Cheese for creaminess.
  • Season & serve – Finish with salt, black pepper, and fresh herbs. Enjoy hot with crusty bread on the side.
