🌱 Vegan Butter Soy Rice (Simple, Comforting & Umami-Rich)

Ingredients
  

Vegan Butter Soy Rice

  • 2 cups cooked rice jasmine, short-grain, or brown
  • 2 tablespoons vegan butter
  • 1½ tablespoons soy sauce or tamari, plus more to taste

Toppings

  • 1 cup broccoli florets steamed or sautéed
  • 1 –2 teaspoons soy sauce for drizzling
  • 2 tablespoons curry ojee sauce

Instructions
 

Cook the Rice

  • Prepare rice according to package instructions. For best results, use hot, freshly cooked rice.

Cook the Broccoli & Tofu

  • Steam broccoli until tender or lightly sauté with a splash of water until bright green.

Melt the Vegan Butter

  • Add vegan butter directly to the hot rice. Gently fold until melted and glossy.

Season with Soy Sauce

  • Drizzle soy sauce over the rice and mix gently. Taste and adjust.

Assemble & Finish

  • Top rice with broccoli, extra soy sauce if desired, and spoon over curry ojee sauce.
