Ingredients
  

  • ½ cup baby greens or arugula
  • 3 to 4 medium heirloom tomatoes about 2 cups, sliced into wedges or thick rounds
  • ½ cup grated Rebel Parmesan Trader Joe’s
  • ½ cup diced Rebel Tomato au Fromage Trader Joe’s
  • â…“ cup mango salsa store-bought or homemade
  • 2 tablespoons fresh dill chopped
  • 2 tablespoons fresh chives chopped
  • 2 tablespoons fresh cilantro chopped
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and black pepper to taste
  • ½ teaspoon agave optional, for balance
  • ¼ teaspoon red pepper flakes optional, for a bit of heat

Instructions
 

Step 1

  • Spread the greens on a serving platter or large bowl.

Step 2

  • Top with sliced heirloom tomatoes, arranging them evenly over the greens.

Step 3

  • Sprinkle with both cheeses, then spoon mango salsa over the top.

Step 4

  • Add the chopped herbs. In a small bowl, whisk together olive oil, balsamic, salt, pepper, and honey if using.

Step 5

  • Drizzle dressing over the salad. Finish with red pepper flakes if desired. Serve immediately.
