Leveling up your salad experience by adding something hearty like this warm caponata quinoa.
Caponata is the Sicilian version of Ratatouille. Caponata uses capers and olives whilst Ratatouille gets its flavor from garlic.
I got this canned caponata from Trader Joe’s and it is a pretty nice to partner with quinoa. Slice up some tomatoes and avocados and you are good to go.

Prep Quinoa
Cook quinoa using one part water 2 parts quinoa. Boil with lid on till fully cooked.

Prep your produce
Cut up some ripe tomatoes and avocados

Assemble & Present
Season your cookies quinoa, I love dressing it up with some infused oil, vinegar and pink salt. Lay fresh cut produce alongside or around the mount of quinoa, top with Trader Joe’s Caponata. Season and dress up as preferred. It’s your bowl, it’s your canvas, get creative, maybe some Furikake, truffle oil or roasted garlic. Possibilities are endless.
Note
Caponata is flavorful eggplant much like ratatouille. This one is from the can but maybe one of these days we will make it from scratch. Pair it up with your favorite pasta, focaccia. Hmmmmm what do you think.
