Description

This angel hair pasta is inspired by Agli Olio, using a lot of finely sliced garlic. I just happen to have a bunch of Greens, I thought they were Boc Choy but upon further research I learned that they were called Choy Sum. Choy sum is a transliteration of the Cantonese name, which can be literally translated as "heart of the vegetable". It is also known as Chinese flowering cabbage. 

The combination of garlic, olive, lemons and Mirin is what elevates this dish. Together with saute'd Choy Sum and you have a exquisite pasta dish. 

Ingredients
  • Capellini / Angel Hair ounces 8 Oz.
  • Mirin Drizzle
  • Olive OIl Drizzle
  • Choy Sum 4 bunches
  • Garlic cloves 10 cloves or 1 bulb
Instructions
  1. Prepare your pasta noodles
    Add angel hair pasta in a pot of salted boiling water. I love capellini or angel hair because they cook instantaneously at around 3 minutes. Strain and run through cold water to stop the cooking. Toss with olive oil to prevent them from sticking.
  2. Prepare Choy Sum
    Drizzle a hefty amount of Olive oil on your pan, throw in your finely sliced garlic. Be watchful not to burn garlic. Stir and release aroma of garlic then throw in chopped Choy Sum. Keep stirring seasoning as you go. I seasoned this one with Mushroom powder and Pink Himalayan Salt. Finally and the most fun part, deglazing. Drizzle some Mirin and let the mixture reduce and let flavors marry and develop.
  3. Assemble and Present
    Throw in your pasta noodles, give it a good mix, be gentle yet thorough allowing all the flavors to be distributed evenly. Garnish with some lemon rind or herb of your choice. You can squeeze in some lemons too for some zest. Feel free to make ot your own.
