This angel hair pasta is inspired by Agli Olio, using a lot of finely sliced garlic. I just happen to have a bunch of Greens, I thought they were Boc Choy but upon further research I learned that they were called Choy Sum. Choy sum is a transliteration of the Cantonese name, which can be literally translated as "heart of the vegetable". It is also known as Chinese flowering cabbage.
The combination of garlic, olive, lemons and Mirin is what elevates this dish. Together with saute'd Choy Sum and you have a exquisite pasta dish.
