Lentils & Mirin Glazed Vegetables

Love Dahl but don’t have the time to gather combinations of spices? This one is for you, we really make the lentils shine on this one. Been cooking lentils this way for quite some time; just water and salt. Lentils are packed with proteins, fibers vitamins and minerals it is really my favorite legume of all time. The flavor is similar to mung bean which I had a lot growing up in the Philippine islands.

The ease and quickness of this recipe is perfect for our busy lifestyle. I honestly had no idea that you could even make lentils this flavorful with very few ingredients. But it is really easy! Feel free to add in some fun additions like your choice of roasted veggies, fritters or vegan meat alternatives, They are all great.

Ingredients
  • 2 cups Green Lentils
  • 8 cups Water
  • 4 cups Vegetable of Choice
  • 2 tablespoons Coconut MIlk (Just to drizzle in the end)
  • 3 Drizzle Mirin (To Deglaze vegeatables)
  • 3 tablespoons Pink Salt (Use your intuition)
  • 3 Drizzle Olive Oil (Just in the end)
  • 4 dashes Herbs (Depends on what you have)
Instructions
  1. Cook lentils

    Boil salted water. Pour in your lentils. Cover with lid and let cook for about 30 minutes or until lentils are thoroughly cooked. This is what makes this recipe special. We are just cooking the lentils with salt and really bring out the flavor of just the lentils. It really is flavorful on its own.

  2. Prep and sear your vegetables

    Cut the veggies into bite sized pieces and sear in a hot cast iron pan with hefty amounts of alive oil.

  3. Sear em up good

    Turning them once in awhile to evenly distribute the cooking. Searing produces a reaction called maillard and results into more flavor. 

  4. Finish cooking the veggies

    Deglaze with Mirin, let the acid evaporate and you'll see that the liquid will become syrup like. Then finish cooking by broiling it in the oven for about 5 minutes.

  5. Assemble

    Give fully cooked lentils a good mix, adjust your seasoning and take the Vegetables out of the oven and set it on top of the lentils, drizzle with olive oil and coconut milk. Garnish with chopped herb and voila!
